meal planning for the family

As part of my living with intention goal, we’ve taken to meal planning. It helps me with my intention of being more responsible with money as well as helping us to make better use of our time and to live healthier lives. By not impulse buying as we walk down the isles (damn those deals on the top of each isle!) there’s less crap in our trolley and less wastage too.

Meal planning week 1
The first week’s meal plan was as follows:

Spaghetti bolognese

Chicken curry

Spatchcock roast chicken with roasted potatoes, onions and aubergines, served with couscous (pasta for Princess instead of couscous)

Chicken pie and chips

Daddy’s ‘special pasta’

Jacket potatoes with backed beans and cheese

Bourbon style chicken thighs with pasta and veg

Total for the supermarket shop £56.39

I think I can easily spend double this when we go for our regular shops. But a lot of that is because Princess is with me and able to sneak snacks into the basket. Yes, and me too, if I’m being totally honest. I’m not the snack queen but do tend to slip in the odd pack of smoked salmon or other luxury buys. Silly really, especially as my appetite has gone to the dogs throughout the entire pregnancy.

There was a lot of chicken going on, didn’t really notice until now. It’s our go to meat. Princess isn’t keen on meat but will eat the occasional bit of chicken.

Everything was made from scratch apart from the chicken pie. We try and have at least one ‘easy meal’ per week for Brownies day as it’s a rush! Everything, although made from scratch, was pretty easy and quick to make after work. Week one? Success!
