What does one do in the middle of a British? Decide to make homemade pizza and stand in a super hot kitchen to knead the pizza dough by hand with your hot, frustrated daughter who really wanted to turn up from after school club to find dinner already made and waiting for her.
Obviously.
I figured it was too hot to drive into town and pick up any food and all we had in the house was some flour, cheese, eggs and random vegetables so homemade pizzas were a clear winner. It didn’t hurt that it meant a meat-free dinner. My daughter is a vegetarian with a penchant for chicken dippers. She’s a complicated six year old. But basically it means that a homemade vegetable pizza is her idea of heaven. Awesome mum award goes to me, totes.

Princess loves helping out in the kitchen and I realised that recently all I’ve been doing is sending her to entertain herself in the living room whilst I cooked. I don’t know why I’ve been excluding her from the cooking process. When I cook alone it’s quicker but that doesn’t enable us some quality bonding time, nor does it teach her essential skills. It was really wonderful to make our dinner together and it’s something she’s been talking about over the last few days, asking to do more of.

My pizza was baked in my favourite cast iron pan which has been playing an essential role in my meals over the last few weeks. It’s by far my favourite cooking vessel because it’s so versatile and cooks everything so evenly. Princess used a cake tin which also cooked the pizza well.

It’s not hard to fall into bad habits and cook the same meals week in and week out so it was lovely to bring back an old favourite. Maybe next time we won’t do it in such hot weather. It was more of a salad day!
