Meal Planning Monday

I’ve been eating like a horse the last few weeks, literally anything and everything I could lay my hands on, though by some stroke of luck, all that ever came to hand were bad, indulgent, high calorie, high fat foods. No wonder then that I’m sluggish and seem more prone to picking up every passing cold from Princess and her motly crew of toddlers. Also, it means I’ve been spending a lot of money I don’t really have on eating out at lunch and in some cases for dinner too as there’s been no thought as to what to stock the fridge with for the week ahead!

Snapshot of my shopping basket

This week I’ve decided to join Mrs M’s Meal Planning Monday’s linky. I always read other blogger’s meals with interest and open awe at being organised enough to have an idea of what they are doing for the week ahead. This week I’ll try to join the ranks!  I sorted out my Tesco order from the confines of the duvet this afternoon (thank goodness for smartphones) and all I need now is to stick with it and cook! Most of these will provide enough leftovers to double as lunch or a second portion of dinner so it should easily stretch the whole week!

Mashed sweet potato with green beans and grilled lamb

Tofu and broccoli stir fry

Sweet potato and cauliflower soup

Egg and tomato (very easy Chinese dish) with rice

Quorn chicken curry with new potatoes and cauliflower rice (shredded cauliflower, steamed)

Fruit salad and raw veg for snacks
Green smoothie or porridge for breakfast

Depending on just how organised I am, there may be a couple of recipes, vlogs or at the very least some instagram photos as proof of me actually sticking to it!

Great idea to screenshot your shopping basket! And yes, thank goodness for smartphones that means we can do things like the shopping whilst on the go.

I particularly like the sound of the sweet potato and cauliflower soup – yummy :)

I was pleased at how balanced the basket looked for once so couldn’t help myself lol.
The sweet potato and cauliflower soup is something I saw on Pinterest and repinned from there!

Looks yummy. I really need to start taking meal planning seriously. I often have no idea what to cook, so end up preparing the same meals or I don’t have the correct ingredients to hand, so meal planning would really sort me out AND save time and money.

yes it’s much cheaper than cooking on the fly! We end up running to and fro the supermarket all week to get the ‘missing’ ingredients when I don’t plan ahead. This is probably the cheapest shop I’ve done in a long time!
