I’ve been eating like a horse the last few weeks, literally anything and everything I could lay my hands on, though by some stroke of luck, all that ever came to hand were bad, indulgent, high calorie, high fat foods. No wonder then that I’m sluggish and seem more prone to picking up every passing cold from Princess and her motly crew of toddlers. Also, it means I’ve been spending a lot of money I don’t really have on eating out at lunch and in some cases for dinner too as there’s been no thought as to what to stock the fridge with for the week ahead!

This week I’ve decided to join Mrs M’s Meal Planning Monday’s linky. I always read other blogger’s meals with interest and open awe at being organised enough to have an idea of what they are doing for the week ahead. This week I’ll try to join the ranks! I sorted out my Tesco order from the confines of the duvet this afternoon (thank goodness for smartphones) and all I need now is to stick with it and cook! Most of these will provide enough leftovers to double as lunch or a second portion of dinner so it should easily stretch the whole week!
Mashed sweet potato with green beans and grilled lamb
Tofu and broccoli stir fry
Sweet potato and cauliflower soup
Egg and tomato (very easy Chinese dish) with rice
Quorn chicken curry with new potatoes and cauliflower rice (shredded cauliflower, steamed)
Fruit salad and raw veg for snacks
Green smoothie or porridge for breakfast
Depending on just how organised I am, there may be a couple of recipes, vlogs or at the very least some instagram photos as proof of me actually sticking to it!
